100 °C

Prof. Wilson: Are you sure that 100oC is the optimal temperature? Let’s see what has happened to the colour.

James: Oh.. at 100 °C the dark-blue colour has remained throughout the experiment. That is strange!

You: It's boiling temperature… probably the enzyme has been completely deactivated!

Prof. Wilson: Exactly! The amylase has been denatured. This is the correct term.

You: That makes sense, this temperature is too high for the human body to cope with. I’d like to give it another try Professor.

Results: Optimal temperature for amylase activity.

What is the optimal temperature for amylase?

  • 37 °C
  • 4°C
  • 22°C
